A famous Gujarati dish made with winter vegetables, fenugreek dumplings, and an aromatic blend of spices, cooked in a clay pot for authentic taste!
Surti papdi (hyacinth beans) Purple yam Baby potatoes Sweet potatoes Brinjal Other Essentials: Methi muthia (fenugreek dumplings) Fresh coconut Green garlic Coriander & spices

Blend fresh coconut, green chilies, garlic, coriander, sesame seeds, and spices into a coarse mixture.
Stuff brinjals and baby potatoes with the masala, then layer all veggies in a thick-bottomed pot.

Add a little oil, then slow cook everything on low flame. Stir occasionally for an even mix.

Add crispy methi muthia and gently mix everything. Cover and cook until flavors blend perfectly.

Garnish with fresh coriander, lemon juice, and sev. Serve hot with puris or bajra rotis!
